German Chocolate Cake Bars

These bars were AMAZING! If you are a chocolate and coconut lover like me, then you'll love them. I found the recipe while looking around in the food section on Pinterest. Have you checked out Pinterest yet? If not, you really should. There are sooo many wonderful things to look at! My favorite, is the endless supply of delicious recipes! Just don't go on there hungry...you'll be sorry! This recipe was from Six Sister's Stuff. I love their blog! They have a ton of great recipes, so check them out.


Crust:
1 box devil's good cake mix (not the kind with pudding added)
1/2 cup (1 stick) unsalted butter, melted
1 large egg

Filling:
1 (14 oz) can sweetened condensed milk
1 tsp vanilla extract
1 large egg
1 cup chopped pecans(I used only 1/2 cup)
1 cup shredded coconut (I used sweetened coconut)
1/2 cup milk chocolate chips(I think I used closer to 1 cup, and I used a combo of milk and semi-sweet chips)


Directions:
Preheat the oven to 350 degrees. Grease a 9x13 inch baking pan (I used non-stick cooking spray).
In a medium bowl, mix together the cake mix, butter and egg, and press into the bottom of the prepared pan. The crust should not come up the sides. Bake for 7 minutes and remove from the oven. The crust will not look done.
While the crust is baking, mix together the sweetened condensed milk, vanilla, egg, pecans and coconut. Pour evenly(IMPORTANT TO POUR EVENLY BECAUSE IT'S HARD TO SPREAD ON WARM CRUST WITHOUT THE CRUST SPREADING) over the warm crust and sprinkle evenly with the chocolate chips. Bake for 24-30 minutes, until the top is a light golden brown. Remove from the oven and cool completely before cutting into squares. Enjoy!!

Chocolate, Chocolate and More Chocolate!

 Are you on Pinterest yet? Well you should be! There are so many amazing things on there like this recipe I am going to share with you. The recipe is the "Ultimate Chocolate Chip Cookie n' Oreo Fudge Brownie Bar" by Amanda over at KevinAndAmanda.com. This bar cookie is packed with as much yumminess as the title would lead you to believe. 

Edited to add-I just typed out this whole blog post and realized I never got a picture of these yummy bars! Ugh! Well, check out Amanda's site to see her pics. They are amazing!

Ingredients:
1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 Tablespoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) milk chocolate chips(I used semi-sweet)
1 pkg Double Stuffed Oreos(I used regular Oreos)
1 Family Size (9×13) Brownie mix
1/4 cup hot fudge topping(I didn't add this, but it would be awesome!)

Preheat oven to 350 degrees F. Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine. In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined. Stir in chocolate chips. Spread the cookie dough in the bottom of a 9×13 baking dish that’s been lined with wax paper and sprayed with cooking spray. Top with a layer of Oreos. Mix together brownie mix, adding an optional 1/4 cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos. Bake at 350 degrees F for 45-55 minutes.

Toffee Bit Cookies


















I'm not sure where I originally found this recipe. I imagine I must have got it off of Hershey's website, but I couldn't find it there today. I love all things toffee and everyone in my house LOVES these cookies!
Ingredients:
2 & 1/4 cups four
1 teas. baking soda
1/2 teas. salt
1/2 cup butter,softened(1 stick)
3/4 cup sugar
3/4 cup brown sugar
2 teas. vanilla
2 eggs
1 bag chocolate covered toffee bits(found in baking section of store)
Directions:
Mix flour, baking soda and salt together. Set aside. Mix butter, sugars, vanilla and eggs together. Set aside. Mix wet and dry ingredients together. Stir in toffee bits. Drop by tablespoonfuls onto an un-greased cookie sheet. Bake at 350 for 9-11 minutes. Pin It

Chocolate Chip Cheesecake Bars


















I made these bars for Christmas Eve and I loved them! I love cheesecake and chocolate chip cookies, so this recipe is a perfect combo! It's also simple to make. The original recipe is from Betty Crocker.
1/2 cup butter, softened
1 pouch (1 lb 1.5 oz) Betty Crocker  chocolate chip cookie mix
1 egg
2 packages (8 oz each) cream cheese, softened
1 cup sugar
2 eggs
1 teaspoon vanilla                              

 Make the cookie dough as directed. Press 2/3 of dough into the bottom of an un-greased 11X7 pan. Beat cream cheese, eggs, sugar and vanilla till smooth. Pour over cookie dough mixture. Drop remaining dough by spoonfuls onto the top of the cream cheese. Bake at 350 for about 25 minutes. Cool and refrigerate for at least 2 hours. Pin It

Lemon Snowball Cookies

One of my favorite things about the holidays are the snowball cookies my mom makes, they are a tradition that I have reserved only for that time of the year until today. Today I worked out in the yard all day with my three children- weeding, planting, cleaning, swimming and picking a few big lemons that just had to be used. I added the zest of one of those perfect tart lemons to a traditional snowball recipe, added a little lemon extract and come up with a fresh, sweet version of our family's holiday tradition that can be used in the summer for a light, sweetly tart, cookie. You can see there are pink and white cookies, the pink ones were made especially for my kids using crystal light pink lemonade cup and powdered sugar. They were a little tart for me but the kids loved them.

Lemon Snowball Cookies

2 sticks of butter
1/2 cup granulated sugar
1 TBL lemon zest or zest from one lemon
1 tsp vanilla extract
1/2 tsp lemon extract
2 cups of flour

Sugar Coating

1/2 cup powdered sugar
(add 1 tsp crystal light lemonade or pink lemonade drink powder mix if you choose)*
Mix together in a medium bowl

Cream together soften butter, sugar, lemon zest and extracts. Add flour and mix just until dough forms. Scrap sides of bowl and work in any extra flour in bowl by hand.

Roll in 1" balls and bake on ungreased cookie sheet for 16 - 18 min. remove from oven, cool for 5 minutes or until you are able to handle but the cookies are still warm. Toss the cookies in the powdered sugar mixture. Cool completely on wire rack or bottoms will get gooey.

Chocolate Chip Coconut Oatmeal Bars

















I don't usually add chocolate chips to my oatmeal cookies. I usually like either chocolate chip cookies, or oatmeal cookies...not combined. Not that I wouldn't eat them(there's few sweets if any that I ever turn down!)it's just not my preference. For whatever reason I've been on a coconut kick and I decided to make some oatmeal cookie bars using coconut and chocolate chips. They did in fact turn out really good! I just used my usual oatmeal cookie recipe with a few additions. Enjoy!

1 cup butter, softened(I like using salted for these)
1 cup brown sugar, packed
1/2 cup white sugar
2 eggs
1 &1/2 teaspoons vanilla
1 &1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups oats(quick or regular)
1 cup semi-sweet chocolate chips
1 cup coconut
 
 Directions:

Mix eggs, sugars, butter and vanilla in a bowl. In a separate bowl, mix flour, salt and baking soda. Combine wet and dry ingredients together. Stir in oats 1 cup at a time. Fold in chocolate chips and coconut. Pour into a lightly greased 9X13 pan. Bake at 350 for 30-35 minutes.

Oatmeal Scotchies (I love these!)





















 

These cookies are one of my all time favorite cookies! I love butterscotch chips and these cookies are packed with them! The recipe is simple and it comes from the back of the Nestle Toll House butterscotch chip bag. I don't make them  often because I consume WAY too many when they are in my house! Especially the first day I bake them.

Ingredients:
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup (2 sticks) butter or margarine, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract or grated peel of 1 orange
  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11-oz. pkg.) butterscotch flavored chips 
Directions:


COMBINE flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE at 375 for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Chocolate Chip Cookies II

I know that Amber already posted her family's favorite chocolate chip cookie recipe so I thought I would post mine. These are the cookies that my family cannot get enough of and if my husband has had a bad day he knows these are waiting at home for him. They are easy to make, have a wonderful vanilla flavor and are just sweet enough to offset the semisweet or bittersweet chocolate perfectly.

Chocolate Chip Cookies
2 1/4 cup AP flour
1 tsp baking soda
1 cup butter, softened
1/2 cup brown sugar
1/2 cup white sugar
1 3.4 ounce package of instant vanilla pudding mix
2 eggs
1 tsp vanilla
2 cups high quality semisweet or bittersweet chocolate chips
1 cup walnuts (optional)

Preheat oven to 350〫Cream butter until light in color. Add both sugars and mix until creamy. Beat in instant pudding mix until blended. Stir in eggs and vanilla until just blended. Mix in flour and baking soda just until blended, do not over mix. Add chocolate chips (and walnuts) but hand. Drop by rounded spoonfuls onto an ungreased baking sheet. Bake 10-12 minutes or until the edges are brown, center will not brown... if it does you overcooked. Serve warm or cool on wire rack.

Oatmeal Craisin Cookies "husband's favorite"

 
My husband has 2 favorite cookies. Chocolate chip and these oatmeal craisin cookies. My list of cookies that I love is much, MUCH longer....however...these are definitely high up there. They are, I must say, quite addicting. It's the same oatmeal cookie recipe I have made for a long time(I believe the vanishing oatmeal cookie recipe from Quaker)but it was the addition of dried cranberries in place of raisins that make these cookies sooo delicious.

Ingredients:

1 cup butter, softened(I like using salted for these)
1 cup brown sugar, packed
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
1 & 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oatmeal(I usually use quick oats)
1 cup dried cranberries(or raisins)

Mix butter, sugars, eggs and vanilla together. In a separate bowl, mix flour, baking soda, cinnamon and salt together. Combine the dry ingredients with the wet ingredients. Mix until just blended. Add oats about 1 cup at a time and mix until blended. Fold in dried cranberries. Drop by tablespoonfuls onto an ungreased cookie sheet. Bake at 350 for 9-11 minutes. Just until edges start to turn golden.

Chocolate Peanut Butter Hearts


















Last Christmas I had bought some cookie cutters that included heart shaped cutters to make sandwich style cookies. I had never made that type of  cookie before, but I always love the way they look with the smaller shaped cut out in the top layer. Since my daughter was going to a Valentine's Day party this week, I decided to try and figure out a recipe that I could use with these new cookie cutters. I looked online at a lot of different Linzer cookie recipes. They sounded wonderful, but I started to think about other ideas and flavors that I could use. Then I thought...chocolate and peanut butter...I love that combination! I started searching for a peanut butter cut-out cookie recipe. I found one that was simple to make. It ended up being a nice dough to work with also. For the filling I chose to use a  pre-made frosting from a tub(keepin' it easy). My daughter and I both thought they were fun and easy to make. Yummy too!  For another idea, try using sugar cookie dough with vanilla frosting and sprinkles. My changes/additions are in bold italic.


 

 

 

 

 

 Ingredients

  • 1 cup creamy peanut butter
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1/3 cup 2% milk
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • I added 1/2 teaspoon salt
  • 1 tub of chocolate frosting(I used chocolate fudge)

Directions

  • In a large bowl, cream peanut butter and sugars until light and fluffy, about 4 minutes. Beat in the eggs, milk and vanilla. Combine the flour, baking powder and baking soda; add to creamed mixture and mix well. Cover and refrigerate for 2 hours or until easy to handle.
  • On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with 2-in. to 4-in. cookie cutters. Place 2 in. apart in ungreased baking sheets.
  • Bake at 375° for 7-9 minutes or until edges are browned. Cool for 1 minute before removing from pans to wire racks to cool completely.
  • I used a big heart cutter for the bottom layer and a big heart and a smaller heart cutter to make the top layer.
  • I sprinkled the top layer with a little bit of white sugar before baking.
  • For best results bake the top layer and bottom layer separately. The top layer bakes much faster. I baked the top layer for 5 minutes and the bottom layer for 7 minutes.
  • Once cooled, assemble the cookies by spreading a thin layer of frosting between the two layers.

Magic Layer Bars






















Every 5 weeks I get to make cookies for one of our church's group get-togethers. I like having the opportunity to try new recipes. Not that I am baking up some strange recipe to bring to them, but considering my husband prefers the choice of either oatmeal or chocolate chip cookies, I don't always get the chance to try anything new. I have never had magic layer bars, but they sounded so good that I had to try them. They were indeed...fantastic! Another one of those recipes that keep drawing you back to them throughout the day. And what an easy recipe. This would be very hard to mess up.

Ingredients:

1/2 cup butter or margarine, melted(I like salted for this recipe)
1 cup crushed graham crackers(crushed into crumbs)
1 cup flaked, sweetened coconut
6 oz chocolate chips, equals 1 cup(I used semi-sweet since it didn't specify)
6 oz butterscotch chips
1(14) can sweetened condensed milk
1 cup nuts, chopped(I used pecans)
















Directions:
Pour melted butter in a 9X13 baking pan. Sprinkle graham cracker crumbs over the top. Next layer coconut and chips in order given. Pour condensed over the top. Top with nuts. Bake at 350 for 25 minutes.

Favorite Chocolate Chip Cookies



Who doesn't love the smell of chocolate chip cookies baking, or the taste of them right out of the oven? I can usually pass them by if they've been in a cookie jar for a couple of days, but can quickly devour them if they are sitting on the cooling racks. I always use the recipe right off of the back of the chocolate chip bag, but I have made a couple of small changes to it over the years. I have noticed that there are other factors aside from the recipe that will affect the finished product, such as the flour that you use. I have added my tips below.

Ingredients:

2 1/2 cups all purpose flour (this is more flour than the original recipe calls for. I think it helps achieve a better looking cookie.)(Also, I think bleached flour provides a better texture. This of course is not necessary though. I have also noticed that some brands of flour work better than others. I have no idea why. I have had my best luck with Pillsbury flour)

1 teaspoon salt
1 teaspoon baking soda

3/4 cups brown sugar, packed
3/4 cups sugar
2 eggs
1 cup butter, softened(I prefer salted)
2 teaspoons vanilla(twice as much as original recipe)

12oz package of semi-sweet chocolate chips



Mix together flour, salt and baking soda and set aside. Mix sugars, eggs, butter and vanilla just until blended. Don't over mix. Add half of the flour mixture, mix. Stir in the rest of the flour mixture. Stir in semi-sweet chocolate chips. Place tablespoonful size amount onto a ungreased baking sheet. Bake at 375 for 8-11 minutes.

Tip: Take cookies out right when edges are golden. The tops may still look not quite done, but they will continue  set as they cool.

Marble Fudge Squares

Marble fudge squares was one of my favorite treats that my mom use to make when I was still living at home. They are so incredibly delicious! The cake is chocolaty with a hint of sour cream, then swirled with cream cheese (which I always love!) and topped with chocolate chips. They are the texture of a cake, not a brownie, but I eat them more like I would eat a brownie. You can cut them into squares, pick them up and eat them. My mom doesn't remember where the original recipe came from. She thinks it came off the back of a coupon or a magazine years ago. Thankfully she wrote it down, because I have not been able to find anything when I've searched online.
Ingredients:

Cream cheese swirl:

8oz pkg cream cheese, softened
1/3 cup sugar
1 egg

Cake:

2 cups flour
1 teas. baking soda
1/2 teas. salt
2 cups sugar
1/2 cup butter
3/4 cup water
1&1/2 oz unsweetened  baking chocolate
2 eggs
1/2 cup sour cream( I used reduced fat and didn't notice a difference)
6oz semi-sweet chocolate chips
Beat cream cheese mixture until smooth, set aside. Mix together flour, baking soda and salt, set aside. Melt butter, unsweetened chocolate, and water together in saucepan. Bring to boil. Remove from heat. Stir in flour mixture. Add sour cream and mix. Add eggs and mix. Last add sugar and mix together until somewhat smooth.(Mine still was a little lumpy) Pour into a greased 9X13 pan. Drop cream cheese mixture onto cake by spoonfuls. Swirl with knife. Sprinkle with chocolate chips. Bake at 375 for 25-30 minutes

Note: Next time I will bake at 350 for 30-35 minutes.

Cookie # 7 EggNog Cookies



I came across this recipe and thought it sounded great, if not at least fun. The first time I made it I tried to half the recipe and somehow screwed it up and it melted all over the pan (I should have taken a picture of that). Second time was the charm for me, the dough was the right consistency, the frosting was aromatic, sweet and full of flavor. This is a rich cookie but something very different from anything I have made in the past. I hope you enjoy it.


Preheat oven to 375〫
Cookie:
1 1/3 Cup butter, softened
2 cups sugar
2 eggs
2/3 cup eggnog
2 tsp dark rum ( I used Meyers)
4 1/2 cup flour
1 tsp salt

Frosting:
4 TBL butter, softened
2 cups confectioners sugar
2 tsp dark run
4 drops yellow food coloring
3 tbl egg nog
1/4 tsp nutmeg (use fresh ground if possible, it does make a difference)

Combine all ingredients for cookies in the order listed. Wrap in plastic wrap and refrigerate for 1-2 hours.
Drop by teaspoonful onto ungreased cookie sheet. Bake for about 12 minutes. When cookies are done, pressing on the centers lightly should leave no impression. Do not overbake.

Combine all frosting ingredients together with an electric mixer until frosting consistency. Frost cookies and sprinkle very lightly with nutmeg.

Cookie # 6 German Chocolate Cookies

I am not a fan of German Chocolate cake but it is my brother's favorite cake so I thought I would try it in a cookie and see if I could get good results. Wow! these turned out really great.

The cookie: Preheat oven to 350〬
1 box Duncan Hines® Moist Deluxe® Swiss Chocolate Mix
1/3 cup milk
1 egg
1/4 cup butter, softened
8 oz semisweet chocolate chips
1 cup chopped pecans (walnuts are another option)

Mix the first 4 ingredients together in a mixer. Stir in chocolate chips and pecans. Drop by tsp onto a greased cookie sheet. Bake for 8-10 minutes. Cool completely on wire rack.

The Frosting:
2/3 cup granulated sugar
2/3 cup evaporated milk (smallest can they make)
2 egg yokes
1/3 cup butter
1 1/2 cup flaked coconut
1 cup chopped pecans
1/2 tsp vanilla extract

Combine sugar, evaporated milk, egg yokes and butter in a medium sauce pan. Cook and stir on medium heat until it comes to a boil. Remove from heat and immediately add coconut, pecans and vanilla. Continuing to stir until thick, once cool spread on cooled cookies.

Treat #5 Chocolate Covered Pretzels















 This year, for my neighbors, I decided to make chocolate dipped pretzel sticks. I love chocolate covered pretzels. Probably  because, like the payday bars, I love the combination of sweet and salty. These were very easy to make. I put them in clear christmas gift bags, tied with a bow and a tag.

Ingredients:
large pretzel rods
Chocolate for melting( I used Wilton's melting chips in cocoa)
Candy, chopped
Ex-butterfingers,heath bits,sprinkles,mini chocolate chips, candy canes(The candy cane pieces and chocolate chips were a little bit harder to work with)
Directions:
Follow the melting directions on the back of your chocolate.  Spoon chocolate over half of the pretzel. Shake off excess. Sprinkle or spoon candy over the chocolate. Set on waxed paper. Once completely hardened, put in gift bags.

Cookie #4 Payday Bars


















One of my favorite candy bars, if not my favorite candy bar is a Payday. I love the combination of sweet and salty. While looking for new recipes to try for this week of cookies/treats, I came across a recipe for payday bars. I never had heard of them, but they sounded really good. I almost completely demolished the bars by burning myself on the hot pan and dropping half of the crust onto my oven door! However, I decided to take the remaining crust from the 9X13 pan, put it in a smaller square pan,  bake it for a few more minutes, and it was saved. I'm so glad, because this turned out to be such a great treat! Oh...and simple...















1st layer/The Crust:

1box yellow cake mix
2/3 c unsalted butter, softened
1 egg

Mix all of the ingredients, press into a slightly greased 9X13 pan. Bake at 350 for 12-18 minutes.(I baked mine for 20-25. Until the edges were golden)

Second Layer:

2 cups of marshmallows

Sprinkle marshmallows over top of crust. Bake for another 5 min.

3rd layer:

1 bag peanut butter chips
2 T. butter
2/3 cup corn syrup
2 cups crispy rice cereal
2 cups salted peanuts

Melt chips, butter and corn syrup in a saucepan. Remove from heat and stir in cereal and peanuts. Poor over base and spread evenly.(I had to press mine around)Cool, cut into squares.

Cookie # 3-Peanut Butter Chocolate Oat Bars

Bars:
1/2 cup butter
1/2 cup white sugar
1/2 cup light brown sugar, packed
1/3 cup peanut butter
1 egg
1/2 tsp vanilla extract
1/2 tsp baking soda
1 cup AP flour
1 cup rolled oats
2 cups semi-sweet chocolate chips

Icing:
1 cup confectioner's sugar
1/4 cup peanut butter
3 1/2 tsp milk
Cream butter and both sugars until creamy. Blend in 1/3 cup peanut butter, egg, vanilla and baking soda. Add flour and oats. Mix well.

Spread in a greased 13x9" baking pan. Bake for 20-25 minutes. Remove and sprinkle with chocolate chips.

Return to the oven and bake for 8 additional minutes. Remove from oven and spread to smooth out chocolate chips. Let cool.

Make icing by mixing together confectioner's sugar, peanut butter and milk until is it spreadable. Spread icing over bars. Refrigerate to set. Cut and enjoy.

Night Before Christmas Mice
















This mouse cookie recipe is a fun recipe to make with the kids. They are more of a cookie for decorating than a cookie that's going to win you best cookie recipe of the year. They have a sweet chocolatey taste, but I felt they were a bit dry. I still wanted to post them though, because the kids really liked them and my daughter had fun making her own little mice.

Ingredients:
3/4 c sugar
1/2 c softened butter
1/2 c shortening
1 t. vanilla
1 egg
2 1/4 flour
1/4 c. unsweetened  cocoa
1/2 t. baking powder
mini semi-sweet chocolate chips for eyes
red or black string licorice for tail

Beat sugar, butter, and shortening until fluffy. Add egg and vanilla, mix well. Mix dry ingredients together and add to wet mixture. Mix well. Form into 1 inch ball, pinch/form nose. Form 2 little flat ears for each and put on head. Add choc. chips for eyes. Bake on un-greased cookie sheet at 325 for 8-10 minutes. Put the tails in right when you pull them out of the oven while still hot.

Makes 3 dozen mice

Christmas Cookie # 1-Chocolate Spiced Crinkle Cookies

Can you believe how close it is to Christmas? The season is in full swing and we know some of you are shuffling your schedule to fit in too many parties on too many days. Last weekend I had three parties in two days and I have a friend who had 5 in two days. I don't know how she did it. We thought it would be fun to give you a weeks worth of cookie/bar recipes that you could make and take to any of your parties. The best part is that they have all been tried by us first and are simply yummy. Here is recipe # 1 I got from a cute little website. My son and husband each ate these until they didn't feel well and I allowed myself one too. Rich, chocolaty and the spices add just the perfect warmth and holiday spirit to each cookie. Spiced Chocolate Crinkles

1/4 cup unsalted butter, at room temp
4 TBL vegetable oil
2 cups packed brown sugar
4 eggs
1 tsp vanilla
2 1/2 cups all-purpose flour
1/2 cup Dutch processed cocoa (this will give it a richer flavor but any unsweetened cocoa powder will work)
1/2 tsp cinnamon
1/4 tsp all spice
1/8 tsp cloves
1/8 tsp nutmeg
1/8 tsp ground ginger
1/2 tsp salt
2 tsp baking powder powdered sugar for rolling the cookies in

Heat oven to 300〫F and line two cookie sheets with parchment paper. If you dont have parchment paper spray pans with non-cookie spray or cookies will stick

In bowl of a mixer cream together butter, oil and brown sugar until well combined but not fluffy

Add eggs and vanilla all at one time and mix to combine In separate bowl sift all dry ingredients together.

Add dry ingredients to the wet ones and mix well ***It will be very soft, you did not do anything wrong**
Drop by rounded tablespoon into powdered sugar and carefully roll in powdered sugar until you get a good coating, place on prepared cookie sheet about two inches apart Bake for 12-15 minutes or until puffed all over.

They will look a little undercooked but will continue to cook on baking sheet for 5 minutes. When almost cool, transfer to wire rake until cooled completely.
