This week I tried a yummy new sweet potato recipe. I was so happy that my kids love it too, seeing that I have such a hard time getting them to eat vegetables, especially my son. My daughter had 2 helpings and my son ate his entire serving. Sweet potatoes are loaded with vitamin A and they also provide a nice amount of vitamin C. I found this recipe on the back of the Princella sweet potato can. It was super easy.
Ingredients:
29 oz can of sweet potatoes in light syrup
1/3 cup chopped pecans
1/3 cup sweetened flaked coconut
1/3 packed brown sugar
3 tablespoons flour(I used 5)
3 tablespoons butter, melted
Heat oven to 350. Place drained potatoes in an ungreased 1 & 1/2 quart casserole dish. In small bowl, combine remaining ingredients. Blend well. Sprinkle over sweet potatoes. Bake at 350 for 35-40 minutes.
THANK YOU!!! I lost my worn and much used Princella label, and now can't find that brand at my local grocery stores. Even the Princella website does not list this recipe. It wouldn't be Thanksgiving without our traditional sweet potatoes! Thanks again!

PRALINE YAMS
40 oz can Princella yams, drained
Half Cup chopped pecans

DeleteGreat recipe I've used for a few years. But my twist is I smash up the sweet potatoes before putting em in the baking dish and topping them.

ReplyDeleteThank you! I was in a bind, too, because my local store didn't carry Princella this year. My twist is that I mix in Great Grains cereal, the one with raisins, dates and pecans. Makes a kind of crumble with the other ingredients, and I add it to the top as well.

You saved the day as I had been searching for this recipe. I made it 2 years ago and usually guests either like yams or not so I only made a small pan. It was a big hit and everyone loved it and raved about it for months. I found the recipe on the can of princella yams but could not find it on the can this year

It's Mommy VV in Columbus, OH, again. I found your recipe in 2011 and now it's 2015! What what? How'd that happen? I still show up faithfully every Thanksgiving (and some Christmases, too) for your recipe. I would be impeached as Chief Cook & Bottlewasher if I ever cooked Thanksgiving dinner without it!! : )
